- Made with ghee, flour, eggs and water the roti dough is rolled into a tiny ball.
- This ball- tossed high and quickly caught for street entertainment- is flattened out into a wafer-thin disc and skilfully twirled high again by the vendor.
- This roti disc is spread into the spattering wok, an egg is cracked in, and diced banana is dropped over the egg.
- It is then folded onto itself four times, fried, turned and fried again.
- The finished delight is sliced into bite-size pieces, drizzled with sweetened condensed milk, sprinkled with sugar, and swirled with chocolate. Very sweet!
Every time I've seen them being made it is by someone of Indian descent. That's interesting; the roti has long-been available in Thailand, but Thai vendors haven't taken to its production in the same way as they have taken to selling Chinese food.
